Chef Rojas graduated from the American Culinary Institute Hyde Park, NY in 1993. Chef Rojas is known for creating innovative, high-impact menus that artfully blend American Continental classics with the vibrant flavors of Latin and Caribbean cuisine. A dynamic culinary leader with a proven track record in luxury resorts, fine dining, and high-volume operations. Adept at fusing traditional techniques with regional ingredients to deliver unforgettable dining experiences. Committed to excellence in kitchen operations, team development, and culinary innovation. Master Chef Jose Rojas is the culinary artist that has developed menus and successful operations at the JW Marriott, Grand Melia, and Izcaragua Country Club in Caracas, Venezuela. Chef Rojas was instrumental in menu and operations development at the prestigious PGA National Resort in Palm Beach, Florida. Given Master Chef Jose Rafael Rojas’ exquisite abilities he was brought in to build and develop the superior and unique menu, and culinary experience at the Michelin rated Daniel’s Steakhouse in South Florida.
